Alyson Mitchell is a Professor of Food Chemistry in the Department of Food Science, and Lead Faculty Advisor for the Food Science major at UC Davis. She received her B.S. in Environmental Toxicology and her PhD in Pharmacology and Toxicology at the University of California Davis. Dr. Mitchell is a Fellow of the American Chemical Society and co-Director the Food Safety and Measurement Facility at UC Davis. Her research program focusses on the chemical understanding of foods with the goal of increasing their quality, health impact, and improving use of co-product streams, and innovating processing for a more sustainable food supply.
